Ingredients
350 g (2 1/3 cups) very ripe avocado
195 g (1 cup) coconut sugar
175 g (7/8 of a cup) cocoa powder
4 eggs
2 t baking soda
175 g (1 cup) chocolate chips

Method

  1. In a stand mixer, cream together the avocado and coconut sugar. Add the cocoa powder, eggs, and baking soda. Continue to mix until a smooth dough forms. Fold in the chocolate chips.
  2. Preheat the oven to 350 degrees F. For large cookies, use a tablespoon to divide the dough into approximately 24 cookies. Drop the scoops of dough onto the cookie sheet lined with parchment. Use the back of a broad metal spoon, dipped in water, to flatten the dough balls to 1/2” thick.  Bake 12-14 minutes, rotating halfway through.
